The following are easy ways to get dinner on the table in a hurry – with a little help from your friends, of course. All recipes are designed to serve two; simply double or triple the ingredients for dinner parties of four or six.

Pasta alla Vodka
Stories about the origins of Pasta alla vodka differ, with some claiming it started out as "Pasta alla Russia" due to its surprising usage of the Russian national drink. Popularized in the 1970s by Orsini's in New York (whose clientele included Jacqueline Kennedy Onassis and Mick Jagger), we first had it on a summer trip to Rome. A tomato-cream sauce finished with Parmesan and often served over penne, you will never know the vodka is there.
A sophisticated dish that is simple to make but lovely to look at, this sauce of wine, lemon and capers can also be used for salmon or veal. Chicken Piccata can be served over pasta or with rice, for a simple one-dish meal. Preparation time: 20 minutes
